Running along the backbone, this long, cylindrical muscle does very little work, which means it stays remarkably tender and cooks beautifully with minimal effort. Sourced fresh from Alberta and never frozen, each 1lb portion is ideal for elegant, restaurant-quality preparations at home.
Pan-sear whole to a golden crust and finish in the oven for a perfect medium, or slice into medallions for a refined plated dish. Season simply with salt, pepper, and fresh herbs — the quality of the cut speaks for itself. Also excellent marinated and grilled for a Persian-style chenjeh kebab.
